Roasted Chicken w/ Kale & Garbanzo Beans

Easy weeknight dish, that will satisfy the whole family!

Last week, I decided to go live on Instagram ( I do this on occasion, so if you aren't already, you may want to consider following me on Instagram. :-) ) while I came up with a recipe for a whole chicken using ingredients I had on hand. The recipe turned out amazing and was a huge hit, so I decided to type up the recipe and share it here!


I paired the dish with some sauteed green beans with sliced almonds and wild rice blend.

Roasted Chicken w/ Kale and Garbanzo Beans

Ingredients:

1 Whole Chicken

1 bag of Tuscan Kale (or any kale)

1 can of garbanzo beans

1/2 stick of beef smoked sausage -sliced

1/2 red bell pepper

1/2 yellow bell pepper

1/4 of yellow onion sliced

1/4 of yellow onion (whole to stuff in chicken)

1/2 cup of white wine (preferably Pinot grigio)

1/4 cup chicken broth

2 cloves garlic sliced

1 clove garlic whole

1/2 medium-size carrot

1 stalk celery cut in half

1 twig fresh thyme

2 tablespoon butter separated

1/4 wedge of lemon

Juice from half of lemon

1 tbsp poultry seasoning

1/2 teaspoon rosemary

1/2 teaspoon thyme

2 tsp garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

Extra Virgin Olive Oil (EVOO) as needed


Directions:

  1. Preheat oven to 400 degrees.

  2. Wash chicken and place breast side up in a dutch oven pot or roaster pan.

  3. Stuff the chicken with the carrots, celery, onion, 1 tbsp butter, lemon wedge, 1 clove garlic, and twig of thyme.

  4. Soften the second tbsp of butter, then mix it with some garlic powder and poultry seasoning. (Not the garlic powder and poultry seasoning from ingredients, just add a little of both to butter)

  5. Next, separate the skin from the breast and rub the butter mixture directly over chicken breast under the skin.

  6. Sprinkle EVOO over top of the chicken to lightly coat and massage all around the outside of the chicken. Then add the poultry seasoning, thyme, rosemary, and 1 tsp garlic powder to the chicken and again massage all around.

  7. Add kale, garbanzo beans, sliced garlic, beef sausage, sliced onions, and sliced peppers all around the sides of chicken. Sprinkle liberally with EVOO and add remaining garlic powder and black pepper. Finger toss all the stuff around the chicken to coat everything with seasonings and EVOO.

  8. Squeeze juice from half lemon around on everything in the pot, then add wine and broth.

  9. Cover with lid and place in oven. Should cook for about 1 1/2 - 2 hours depending on the size of the chicken.

  10. Enjoy!
