GRILLED VEGGIE AND SMOKE SAUSAGE PLATTER

I love one pot meals. The convenience of throwing everything into one pot and placing it in the oven, is like none other on a week night. So, in the summer when it is too hot to turn on an oven, my gas grill comes to the rescue.


This dish is packed full of veggies, and gets lots of flavor from the smoked sausage and garlic. I usually make these in individual foil packets, for each member of my family. However, this year I found these grill pans at Meijers, so I threw everything together in one of the pans and covered with my non-stick Reynolds aluminum foil. I put the whole thing on the grill at about med-high heat, and then just tossed everything around about ever 10-15mins. The meal was done in about 30 mins on the grill.
