This delicious salad is certain to make an amazing impression on both you and your lunch date!

If you started a new fitness journey and included lots of salads, by now you are probably losing interest in the idea of eating the vegetable medleys.

Well, don't fret just yet! I have just the thing to restore your faith and jazz up your boring old lunch salad. This colorful salad isn't only beautiful and tasty it is also packed with good for you vitamins, fats, and protein.

We start the salad off with a bed of power greens. I like to use power greens because of how rich these greens are in vitamins. These greens are rich in vitamin A, and C, and have a nice contribution of iron and potassium.

Once we lay the foundation we add crisp cucumber and radish slices. They provide just the right amount of crunch to our salad, to diversify the textures. Then for some added brightness of color, we sprinkle on some sliced-up heirloom cherry tomatoes. YUM! On top of that comes our main source of protein, for me, I used tuna salad (But would also go great with grilled chicken or lentils!). At this point, we add on some additional garnishments of edamame, microgreens, and half of an avocado sliced up.

I season it with everything but the bagel seasoning, and a drizzle of olive oil. This was a hit with my family and I am sure you will love it too. Enjoy!
