Just wanted to share with you all this great quick healthy meal prep, that both my son (12yrs old) and I loved.
It‘s a super easy recipe, so simple that my son can even make it for our lunches, on days when this momma needs a break lol.
All we did is take some chicken tenderloins, zucchini, red onion, broccoli, and cherry tomatoes and rubbed them down with some olive oil and seasonings (we used garlic powder, Italian seasoning, black pepper, and Montreal chicken seasoning). We then placed them on a parchment paper lined cookie sheet in the oven at 400 degrees for about 30-40mins.
While the meat and veggies cooked we heated up instant brown rice in the microwave.
once everything was done we just assembled all in storage containers for lunches for the week. This amount have both myself and my son three lunches each for the week.
